This is my first time making something from my own recipe and possibly my.... 3rd? time making cupcakes from scratch so bear with me- this recipe definitly needs some tweeks.
Ingredients:
4 cups of wholewheat flour
1/2 cup oat bran
1/2 cup rolled oats
1 cup brown sugar*
2/3 cup coconut oil
1 cup honey
1 1/2 teaspoons vanilla extract
2 teaspoons baking soda
1/2 teaspoon salt
2 cups warm water
1 1/2 teaspoons white vinegar
for the frosting:
2 1/2 cups powdered sugar
handful of poppy seeds for garnish
1 1/2 cups softened butter
1 cup honey
1/2 tablespoon vanilla extract
20-25 strawberries for garnish
~makes 20-23 cupcakes~
*I put 2 cups of brown sugar in mine but I realized that with the honey there doesn't need to be that much sugar and mine turned out SUPER sweet.
Keep in mind that the oat bran and oats are optional! You can add other things or take away as you like. I want to try making these with wheat bran and oat bran next time! You can also use white flour and/or white sugar if you would like to and the coconut oil can be substituted for different oils as well. I chose coconut oil because of its health benefits - great for the skin too!
In one bowl combine the dry ingredients (flour, oat bran, oats, sugar, baking soda, salt) in another bowl combine all the wet ingredients (oil, vanilla, water, vinegar *not honey yet*) If you use coconut oil you may have to heat it up a little in a pot on the stove, make sure that your water is warm so you don't re-solidify the coconut oil when you add it. After that, slowly mix the dry ingredients into the wet ingredients until there are no lumps in the batter. Then mix in the honey.
Fill your cupcake pan with liners and add the batter and bake at 350 F for 20-23 minutes. Stick a toothpick in the middle and if it comes out clean, they are done!
For the frosting beat the butter with an electric mixer until it is creamy add sugar slowly while beating. Amount of sugar is up to you so just add one cup first then, add the honey and vanilla extract. If it is still not sweet enough for you then add more powdered sugar until it is.
When the cupcakes are completly cool (this is an important step I learned when I got impatient and tried to frost them right out of the oven and my frosting melted and made a mess everywhere!) frost them either using a knife or if you wanna be fancy a gallon ziplock bag with the corner cut off works just fine. I refridgerated my frosting for a bit beforehand so it kept it's shape.
Garnish with some poppy seeds and strawberries!

Well i was thinking of starting a bakery business, like bakery Newcastle have anyone idea about this , i will highly appreciate suggestions from current bakery business owners
